This is not just any hummus recipe. It’s the recipe passed down from my Lebanese great grandmother, Amelia, and I’ve never found a better-tasting dip for pita, celery, carrots, pretzels, or any other dippable bite you may have on hand.
Seriously, people won’t be able to stop! Enjoy!
Amelia’s Hummus
2 cups drained, rinsed, canned chickpeas
½ to 1 cup cold water (if needed to thin)
2 tsp salt
3 medium-sized garlic cloves, peeled and finely chopped
¼ cup fresh lemon juice
1 cup tahini
1. In a small bowl, mash the garlic to a paste with a pestle or the back of a spoon. Add the chickpeas to ½ cup water, and mash vigorously to a smooth puree.
2. With a large spoon, beat in the lemon juice, a few tablespoons at a time. Beating constantly, pour in the tahini in a slow thin stream and continue to beat until the mixture is smooth.
Serve on a fun or fancy platter and enjoy!
