Happy summertime!
Today I’m sharing a go-to summer recipe that is super quick and FRESH! I found it in Gwyneth Paltrow’s first cookbook, It’s All Good. If you haven’t skimmed through it, I definitely recommend picking up a copy. The book includes pantry stocking grocery lists, tons of helpful tips and so many delicious, healthy recipes like this one!
Also, I like to modify based on what I already have in my cupboard. If I don’t have all the necessities, I find I enjoy the dish more when its tailored for me and I am more likely to make it if I don’t have to run out to the store! I’m going to give you her exact recipe and my modifications as well (below). Hope you enjoy it as much as I have! Happy eating!
Quinoa Granola with Olive Oil and Maple Syrup
1/2 cup EVOO
1/2 cup good quality maple syrup
3 cups quinoa flakes
pinch of sea salt
1 1/4 cup roughly chopped walnuts
1 1/4 cup roughly chopped pumpkin seeds
3/4 cup roughly chopped dried figs (stems removed)
3/4 cup roughly chopped prunes
Whisk together the evoo and maple syrup. Add quinoa flakes and mix alllll together then spread onto parchment paper (I have found that a thin, even spread bakes most evenly). Sprinkle on a little sea salt as well as your nuts. Press the nuts into the granola. Add the fruit to the top and one last little smush-a-roo and you are ready to bake! Pop into a preheated 350 oven for approx 15 mins. Easy peezy, right??!
Okay, so here are my modifications…
I typically reach for honey over maple syrup, and instead of all of the individual nuts and fruit, I like to use my favorite trail mix; it is perfect for those little nut bits that are at the bottom of the bag! Voila! We have fresh granola, my friends! Put that in a bowl with some almond milk with fresh strawberries, a little drizzle of honey, splash of cacao nibs and you have yourself a quick, healthy sweet treat!
